Ingredients:

For Sambar Masala:

  • 1 green chili, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 tablespoon sambar powder (available in stores or homemade)
  • Salt to taste
  • Fresh coriander leaves for garnish

For Tempering (Tadka):

  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Curry leaves

Instructions:

  1. Prepare Sambar Masala:
    • Heat oil in a pan. Add fenugreek seeds, coriander seeds, chana dal, urad dal, cumin seeds, dried red chilies, and coconut (if using).
    • Roast the ingredients until they turn golden brown. Allow them to cool and then grind into a fine powder. This is your sambar masala.
  2. Prepare Tamarind Extract:
    • Soak the tamarind in warm water for 15-20 minutes. Squeeze the tamarind to extract the pulp. Strain the pulp to remove any solids.
  3. Cook Lentils:
    • Cook toor dal until it’s soft and mashable. You can use a pressure cooker for this.
  4. Cook Vegetables:
    • Boil the mixed vegetables until they are tender. You can use a variety of vegetables according to your preference.
  5. Make Sambar:
    • In a large pot, combine the cooked toor dal, boiled vegetables, tamarind extract, chopped onions, tomatoes, green chili, turmeric powder, red chili powder, sambar powder, and salt.
    • Add water to achieve the desired consistency and bring the mixture to a boil. Let it simmer for 15-20 minutes until the flavors meld.
  6. Prepare Tadka (Tempering):
    • In a small pan, heat oil for tempering. Add mustard seeds, cumin seeds, asafoetida, and curry leaves. Let them splutter.
  7. Add Tadka to Sambar:
    • Pour the tempering over the sambar and mix well.
  8. Garnish and Serve:
    • Garnish with fresh coriander leaves.
    • Serve hot sambar with rice, idli, dosa, or vada.
