Ingredients:
- 1 cup soya chunks
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- Oil for cooking
Instructions:
- Prepare Soya Chunks:
- Boil water in a pot, add the soya chunks, and cook for about 5-7 minutes or until they become soft.
- Drain the water and rinse the soya chunks under cold water. Squeeze out any excess water.
- Cooking the Curry:
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they become golden brown.
- Add Spices:
- Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Tomato Puree:
- Add tomato puree and cook until the oil starts to separate from the masala.
- Add Soya Chunks:
- Add the boiled and squeezed soya chunks to the masala. Mix well to coat the soya chunks with the spices.
- Simmer and Garnish:
- Add garam masala and let the curry simmer for 10-15 minutes, allowing the flavors to meld.
- Garnish with fresh coriander leaves.
- Serve:
- Once the soya chunks are well-cooked and the curry has reached the desired consistency, turn off the heat.
