Soya curry is a vegetarian dish made with soya chunks, which are also known as textured vegetable protein (TVP) or soy nuggets. This dish is a great source of protein and is popular among those looking for meat alternatives. Here’s a simple recipe for Soya Curry:

Ingredients:

  • 1 cup soya chunks
  • 1 large onion, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Oil for cooking

Instructions:

  1. Prepare Soya Chunks:
    • Boil water in a pot, add the soya chunks, and cook for about 5-7 minutes or until they become soft.
    • Drain the water and rinse the soya chunks under cold water. Squeeze out any excess water.
  2. Cooking the Curry:
    • Heat oil in a pan. Add cumin seeds and let them splutter.
    • Add chopped onions and sautĂ© until they become golden brown.
  3. Add Spices:
    • Add ginger-garlic paste and green chilies. SautĂ© for a minute until the raw smell disappears.
    • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  4. Tomato Puree:
    • Add tomato puree and cook until the oil starts to separate from the masala.
  5. Add Soya Chunks:
    • Add the boiled and squeezed soya chunks to the masala. Mix well to coat the soya chunks with the spices.
  6. Simmer and Garnish:
    • Add garam masala and let the curry simmer for 10-15 minutes, allowing the flavors to meld.
    • Garnish with fresh coriander leaves.
  7. Serve:
    • Once the soya chunks are well-cooked and the curry has reached the desired consistency, turn off the heat.
    • Serve hot with rice or Indian bread.
